many fields have random rows of corn left stands when all the other rows are cut down

My guess is that:
When operating a harvester, it's very possible to miss a row of corn.
There are times when they overlap too, but there would be no evidence of the overlap where the harvester had passed over the same row twice.
Apparently, it's not worth it to send somebody out to get the corn left standing.

I like to think it's so all of the little harvest mice have a safe place to hide and some corn to see tham over the winter - but I suspect tbruce's answer might be the right one.
