how do I use type in new info on a dopwnloaded document?

I scanned a form. I sent it to text edit, downloads, documents, my e-mail. No matter where I open it, I can't enter new text.

The scan is essentially a picture. You have to run your scan through an OCR (optical character reader) like ABBYYs fine reader. That makes text out of it. Then put it in a word processor to edit it. Most printers come with an OCR. You will also find they make mistakes.
