If chicken still "bleeds" after it's cooked, it means that the chicken is undercooked. This may be due to one or both of the following:

- Your cooking temperature was too high resulting to the fast cooking of the meat's outer portion, while the inner part was still not completely done;

- If you used frozen chicken meat, it was probably not completely thawed out prior to cooking, i.e., the inner part was still partially frozen. Thus, inner portion would require higher cooking temperatures or longer cooking time than the outer part.
