It could be you didn't have enough liquid in the jar to cover them, but as a matter of safety I would suggest any canned goods that are discolored should be thrown out and not eaten.

Tin tomatoes or any tin product that changes colour is the result of oxygenation. Perhaps they have not been processed correctly or maybe there is a small whole in the can that as allowed air to get in, and therefore bacteria.

Throw away if this happens to you.
