I don't eat anything after the expiration date. Things that are creamy make me especially nervous when they are about to expire. Bad things can happen if you eat spoiled food. The closer it is to it's expiration, the harder it is to tell if it is starting to spoil. You usually don't find out until you are hunched over the bowl, praying for death.
When in doubt, throw it out.

There is no single answer to that question.

Expiry dates are a guideline which tell you that a food should be fir for consumption up until that date if stored correctly.

However, they are not a guarantee and you will find that if you leave the milk out in the sun all day the expiration date becomes irrelevant.

Similarly, food doesn't automatically become unsafe once the expiry date has been reached. For example, sealed and properly refrigerated milk is often fine to drink of 3 to 5 says after the expiration date.

The best thing to do is use common sense. If your dip has been properly stored in a sealed container and is less than a week past expiry, it's probably fine. On the other hand, is it worth getting ill for the price of a jar of dip?
