Apparently you can. I never realized that it was a good thing to do. Here are a couple of sites that will give you great advice on how to do it. I might try this next Thanksgiving!

You can do it overnight in the oven but if you don't baste it occasionally it might be a bit dry. You also must set your clock to turn it off and remove it at the proper time.

on a very low oven making sure it is bell basted by covering it while cooking using bacon strips over the breast and pushing a rosemary flavoured under the skin

rub with butter all over season pour 2 cans of beer over turkey while in cooking bag seal and cook slow delicious and juice makes a stuffing or dressing.
