Split 'em with a knife--hard tap--and use a teaspoon to gut the little sucker - <lol>
Seriously, cover the eggs with water and boil on low for about 12 minutes
Cool the eggs by placing them in cold water with 1 teaspoon of baking soda and ice. The baking soda raises the pH level and reduces adherence. If you choose not to use baking soda, be sure to move the eggs into cold water with plenty of ice immediately after boiling. Crack the top of the egg and remove a small piece . Crack the bottom (wide end) of the egg and remove a small piece. Hold the egg in your hand and blow vigorously into the narrow end of the egg, which will expel it out the wide end
Really fresh eggs don't peel well. Eggs that are a couple of weeks old are the best ones to hard boil. I don't know why it works that way, but older eggs make the best hard boiled ones.
When boiling process is thru, I immediately remove the eggs from the hot water & place them under tap water. Maybe the sudden change in temperature causes the thin film (under the eggshell) to detach from the eggwhite & thus makes it easier for the eggshell to be removed. I really don't know what makes this work, but it does work for me.
When you're peeling the eggs, do it under cold running water! It really works, and you won't crack up! Now go to bed! It's late and you have school in the morning!
