Peaches discolor rapidly so peel under cold water or after a few seconds of blanching, if the skins are hard to remove.Remove the stones and slice peaches into a syrup made with 250g sugar to every 500ml water.Add 1 tlbsp of lemon juice to prevent discoloration.Pack in containers,immersed in syrup and freeze.
