VW Jetta cutting out

1. the car cuts out at any time
2. it can happen once a week or two weeks or month
3. it can happen at the robots or while I'm driving
4. after +- 30 seconds it starts again
5. the mechanics say that they will only be able to help me if the problem occurs while the car is with them (murphy's law won't allow the car to cut out whole it's at the mechanic)

A vehicle technican should be able to solve this problem very easily by hooking it up to a vehicle diagnostics machine and running a program for error codes. It could be any of the following: Faulty coil pack, ignition system problem or problem with ECU codes. You have not given the year of manufacture so its impossible to give a detailed answer.
