how can I freeze something but keep it soft enough to scoop?

I am making a potato based dessert and want to know how to freeze it, but keep it squishy enough that it can be dished out...No dairy or added sugar or soy....suggestions?

Add some kind of alcohol - a bit of your favorite liquor - preferably vodka which would be tasteless, but keep your dessert scoopable! It really works because alcohol doesn't freeze!

well what the person stated above is pretty useless. Since its a potatoe based desert and liqor would not be quite the thing to add. So i would say that it depends on how frozen you want it. The best you can do is just put the freezer settings on low and constantly keep watch on the desert until it is frezzes to your preference.

Well make sure the temp is above freezing which is 32 degrees fahrenheit but not high enough to melt then make sure the water added is very low!! Potatoes have a natural chemical that slows the feezing effect so it should not be a problem just the water added!! ")
