apple riddle

There are 20 people in an empty, square room. Each person has full sight of the entire room and everyone in it. If you are not allowed to move in any way (other than your eyes). Where can you place an apple so that all but one person can see it?

on top of the one persons head, that person will not be able to see it

This is very tricky riddle since I have confusion with 2 things:

1. Only eyes can be moved but how about moving hand to place the apple? Is it allowed or not?
2. How can I see persons in the line of mine without moving the head sideways, if say eveyone is standing around the periphery of square room.
