"Doing a Caruso" refers to David Caruso, the redhedead actor who had a multi-year contract with the series NYPD Blue. He decided to leave the series after the first season to act in movies... which turned out to be really bad choices on his part: acting in movies like "Kiss of Death" and "Jade".
